Recipe: Crack Salsa


This recipe was originally introduced to our family as "Texas Caviar" but once you start eating it you'll realize why we refer to it only as "Crack Salsa."  Once you start eating, you will want to consume it all, which is quite a feat considering how much salsa this recipe makes!  I recommend making it for a party or divvying up between a few friends!


Ingredients
  • 1 can Black Beans
  • 1 can Black-eyed Peas
  • 2 cans Mexican Style Corn (we have reverted to using regular corn frozen from our garden)
  • 1 can Pinto Beans
  • 1 can Diced Tomatoes
  • 1 large Red Onion diced
  • 1 Red and 1 Green Pepper chopped
  • 1 can Kidney Beans
  • 1 Bunch of Cilantro chopped
  • JalapeƱos to taste
  • 1 cup Hendrick's Dressing
  • Juice of one Lime
    *Note: Feel free to substitute in whichever beans you prefer.  Sometimes it's difficult to find every kind in a small grocery store, so just do your best.


    Directions:
    1. Rinse Beans
    2. Drain Corn
    3. Mix all ingredients
    4. Open a bag of tortilla chips and eat, and eat, and eat!
    *Tastes even better once it's had a little while to marinate together.
